I really wanted Chicken Pot Pie the other day, and wanted to serve it on myPaleo Meal Delivery Service. I didn’t have any Lard on hand so used coconut oil instead, but exactly the same way as she used the lard.
As well, you can use whatever herbs you have on hand to make this dish… If you don’t like rosemay, leave it out and add what you do like 🙂

Lamb was one of those roasts that when I was a kid we didn’t have that often. It was pricey and we didn’t have that money to spent on costlier cuts of meat. Leg of lamb was always made by my grandmother at Easter and oh was that exciting… As a boy, I loved the crisp outer layer of fat attached to some meat and then the inevitable fatty drip down the chin. Well, another year has passed (ok not quite as it’s still December) and I find the need to to reflect on the past year or so creeping over me… The past 16 or so months have been very tumultuous for me: Legally separating from my wife, moving out, buying a house, working 2 jobs while starting my own business, and developing a new relationship with a fantastic woman all the while being a single dad bi-weekly.
Going away on vacation can be trying when you are on a paleo framework at the best of times, especially if you are travelling abroad and have to navigate foreign food customs… Sometimes it’s easy, for example in Argentina, where they eat a lot of meat, or difficult in places where language is a barrier.
Now try going on a vacation/trip where you have to bring all of your own food that has to last for several days, stays fresh with minimal refrigeration, doesn’t weigh you down and still falls within the realm of Paleo… Well that’s just what I did this past extended weekend. My friend and I went on a 4 day/ 3 night canoe trip into the interior of Algonquin Provincial Park; 4 portages and 5 lakes carrying all our own gear and food. Read more
Ok its official… I have a new favorite cookbook!! And it’s called “ BeyondBacon
” from Stacy Toth and Mathew McCarry, The Paleo Parents. Throughout my entire life, pork has held a special place. Almost all special occasions excluding Christmas and Easter included a pork roast. Summers where filled with Grilled loin chops and tenderloins and always baby back ribs. There is really not much that compares with the succulent taste of pork dripping in its own fat!! Oh and bacon, always bacon.

Yesterday, I noticed someone on twitter refer to “being hungry” so they ate “old hummus” and proceeded this with the #paleo hashtag. Now hummus, as you may or may not know, is made primarily from garbanzo beans (commonly referred to as chick peas) which by all Paleo standard is a no no. Legumes a definitely permitted. However, hummus is fracking delicious!! After I saw that I thought back to the last time I had the scrumptious condiment. It had been over 2 years!!
