Roasted Curry Drumsticks w/ Cucumber Lime Cilantro Salad

Here is an inexpensive great tasting paleo meal that can be made in about 30 minutes.

The other day, while on vacation and hanging out at the beach, there was a large family picnicking and enjoying the great weather we were having. On their charcoal BBQ was the most amazing smelling chicken. The pungent smell of curry kept wafting over to us as we salivated and wished we were invited over to eat with them.

While they BBQ’d their chicken, I decided to roast mine. If you wanted to, you could grill this recipe as well. Also, you don’t have to use drumsticks; any cut of chicken will do. I just wanted to make this on the cheap to show that paleo can be easy and inexpensive (plus I happen to like drumsticks).

Curry Chicken Drumstick:

  1. 3 -4 lbs of drumsticks
  2. 3 tbsp curry powder
  3. 1 tbsp cumin powder
  4. 1 tbsp paprika
  5. 1 tbsp garlic powder
  6. 2 tsp ginger powder
  7. 1 tsp coriander powder
  8. 1 tsp black pepper
  9. 1/4 tsp allspice
  10. 1/4 tsp cloves
  11. 1/4 cup fish sauce (look for sugar free)
  12. 2 tbsp coconut aminos ( or GF soy sauce)
  13. 1/4 cup olive oil

Mix all of the dry and wet ingredients in a large enough bowl to accommodate the chicken.

Dump in the drumsticks and toss with the marinade.

Let sit in fridge for 1 hour.

Place on a cooking sheet and roast in the oven at 375 for 30 minutes.

while those are cooking, you can make the salad.

Cucumber Lime Cilantro Salad:

Dressing

  1. 2 limes (juiced)
  2. 1/4 cup olive oil
  3. 2 tbsp fish sauce (sugar free)
  4. 1 tbsp Dijon mustard
  5. 1/4 tsp black pepper

Salad

  1. 2 english cucumbers, halved and sliced thin
  2. 1/4 red onion sliced thin
  3. 3 ribs celery sliced thin
  4. 3 tbsp cilantro (fresh, chopped coarsely)

Whisk up the salad dressing and toss with the vegetables in a bowl. Let sit in the fridge until ready to serve.

    Yummmmmm!!!!! Tried this tonight. I marinated the chicken all day while I was at work and cooked it when I got home. I was going a little fast through the recipe and ended up putting more allspice in than was called for, but it was still great. And the cucumber salad was fabulous too. Can’t wait to try the salad recipe with the leftovers!!! Thanks for a great recipe. It will stay in rotation at my house for quite a while!
