Special Thai Almond Sauce

The other day, we had an “End of Sectionals” Team WOD and potluck party at our CrossFit box. I brought some Indonesian Chicken Satays with a sauce that I modified from a traditional peanut sauce. I used almonds instead of the peanuts in this version as peanuts are a legume and not “permissible” on a paleo diet. I was going to use Macadamia nuts, but ran out and hadn’t restocked them… Oh well, almonds are just as tasty.

Quite a few people have asked me for the recipe so here it is.

Thai Almond Sauce:

  • 2 tbsp oil
  • 4 cloves garlic minced
  • 1 tomato chopped
  • 1 sm onion minced
  • 1 tbsp cumin
  • 1 tbsp coriander
  • 2 tbsp paprika
  • 1 tsp ginger powder
  • 1/2 tsp turmeric
  • 1 bay leaf
  • 3 tbsp fish sauce
  • 3 tbsp soy sauce
  • juice of 1 lime
  • 1/4 cup honey
  • 1 can coconut milk
  • 1/2 cup almond butter
  • 1/4 cup ground almonds

Fry onions, tomato and garlic in the oil on med/high heat until soft.
Add in the spices and cook for about a minute.
Add in the sauces, lime juice, coconut milk and honey and cook for a few more minutes.
Add in the almond butter and stir until it combines and thickens.
Turn off and stir in the ground almonds.
Add a bit of water/coconut milk to the mix when re-heating from cold.
