Every sunday we have my mother over for dinner (she lives near us in a long term care facility due to a stroke) and my plan was to have grilled beef tenderloin which I thought we had down in the basement freezer… Guess what? We didn’t have enough for three adults and two kids. Aargh!!
I already had all of the other accompaniments to dinner figured out in my head and had all of the ingredients to go ahead with them, but now I had no protein. Time to go a-huntin’ and rootin’ through the freezers for inspiration.
I found a bag of pre-peeled raw shrimp and two hot Italian sausages. There was also a some leftover homemade green curry marinade in a small freezer bag. So, seeing as my mom loves shrimp and the kids will eat sausage, the new dinner plan was set: Grilled Green Curry Shrimp Skewers, Grilled Sausage, Grilled Sesame Asparagus and Asian Slaw.
