Super Simple Fresh Vegetable Salad(s)

Damn, you need something quick to go with that piece of meat you cooked… What do you do?

Make a damn salad! They are quick and usually pretty easy to make.

Here is a very simple and quick vegetable salad that I make all of the time. Usually I use carrots, peppers and a fruit like mangoes or cucumbers. If you use Mangoes make sure that they are green and firm or your slad will be to sweet and mushy.

Ingredients:Paleo Vegetable slaw

  • 1/2 Carrot (Slivered)
  • 1/3 Cucumber (slivered)
  • 1 Mango (slivered)
  • 1/4 Red Onion (slivered)
  • 1 Clove Garlic
  • 1 ¬†tbsp Apple Cider Vinegar
  • 1 tbsp Olive Oil
  • Salt & Pepper

Method:

  1. Using your mad knife skillz, slice and sliver the vegetables and fruit… Or you can use a mandolin like this Japanese style one by Benriner
  2. Mince the garlic.
  3. Toss it all together in a bowl and serve immediately
  4. It will keep in the fridge for about a week, but the mango and cucumber may start to get mushy in a few days… still totally edible, just not the best texture anymore.
